A few weekends ago, my wife got a craving for banana bread and came up with this delightfully modified spin that includes another favorite, chocolate chips. This recipe is now my new favorite, which is really saying something… Because I don’t really like bananas as a general rule.
3 ripe bananas, mashed
1/2 cub unsalted butter, melted
1 teaspoon vanilla extract
1 teaspoon baking soda
1 pinch of salt
1/2 cup granulated white sugar
1/2 cup brown sugar
1 large egg, beaten
1 1/2 cups all-purpose flour
1 cup chocolate chips
1/4 cup un-sweetened coconut, shredded
Pre-heat oven to 350 F
Grease and flour a 9″X5″ loaf pan
In a mixing bowl, mash the ripe bananas until they are the consistency of applesauce
Stir in the melted butter
Add baking soda and salt the banana mixture and mix
Add granulated sugar, brown sugar, egg and vanilla extract and mix well
Add in the flower and stir until incorporated
Fold in most of the chocolate chips, reserving a few to sprinkle on top
Add in the coconut and stir
Pour the batter into the prepared loaf pan
Sprinkle remaining chocolate chips on top
Bake in the oven for about 65 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for 10 minutes before removing from the pan.
